Overnight Sourdough Pancakes
These are a simple sourdough pancake that can easily be mixed up in a few minutes. You can mix them up the night before, for a quick and easy breakfast, or mix them up and cook them right away. These light and fluffy sourdough pancakes are my family’s favorite breakfast next to my sourdough sticky buns. Because these pancakes are a simple plain sourdough pancake, you could easily top them with blueberries, chocolate chips, strawberries, or whipped cream. The topping flavors are literally endless. My family enjoys eating them with sausage gravy and warm cayenne maple syrup.
Instructions:
Step One:
Mix together egg, sourdough starter, oil, milk, and vanilla extract in a large bowl.
In another small bowl, mix together flour, baking powder, and salt.
Fold the dry ingredients into the wet ingredients. Do NOT over mix.
Step Two:
If you are going to ferment the pancakes overnight cover the batter with cling wrap and leave on the counter overnight.
If you are not going to ferment them overnight go ahead and cook them.
Heat your pans, I use a cast iron pan, over medium. Grease with butter or coconut oil.
Spoon batter onto your hot pans to the desired size pancake. Cook until golden and all the bubbles have popped and no more bubbles are forming. Flip the pancake and cook until golden.
Serve and top with the topping of your choice.
