What is Tallow?

Our beef tallow is a rendered fat obtained from 100% grass-fed and grass-finished organic cattle, prized for its rich nutrient composition and skin-friendly properties. It is rich in vitamins and fatty acids that closely resemble those found in human skin, making it an effective moisturizer for various skin conditions.

Harvesting beef tallow begins with sourcing high-quality, grass-fed and grass-finished cattle. The fat is carefully collected during the butchering process, focusing on the kidney and surrounding areas, where the most nutritious fat is found. Once harvested, the fat is trimmed and cleaned to remove any impurities, ensuring that only the purest fat is used.

The next step is rendering, which involves gently heating the fat to melt it down mixed in salt and water. This can be done using various methods, such as slow-cooking or using a double boiler, to ensure the fat doesn’t scorch. I use a slow cooker.
The salt is used to draw out any impurities into the water. So after the fat is strained and cooled, the fat separates from the water, the impurities are then drawn into the water.
As the fat melts, any remaining impurities or solid bits are filtered out, resulting in a smooth, liquid tallow. This rendered fat is then allowed to cool and solidify in the fridge. We do this process twice before using the tallow.
