Peach Cobbler: Sugar Free

It is peach season and our peach tree is loaded. We have so many peaches this year we almost don’t know what to do with them. It is time for the perfect summertime treat, Peach Cobbler. This cobbler is made with peaches that are farm fresh and picked ripe. It is topped with a sugary coated sourdough bread topping.

This peach cobbler is topped with a bread topping. I normally use my Sourdough Sandwich Loaf recipe for the topping, but you could use almost any plain bread that you have, like wheat, brioche, or even white.

Instructions:

Step One:

Set a pot of water on to boil, once boiling, gently place in your peaches and boil for 25-30 seconds.

Once the peaches have been boiled, transfer the peaches to a bowl of cold water and ice. Let them cool in the ice water for about 1 minute. Remove peaches from water.

Then divide each peach into 4 pieces, take the pits out, and peal off the skin. Then slice the peach into desired size and place in the bottom of a 9×13 glass baking dish.

Step Two:

In a large bowl beat together, by hand with a whisk: egg, maple syrup, coconut sugar, cinnamon, and flour. Once mixed together, whisk in melted butter (see notes).

Once the sugar mixture is mixed up, slice your bread one inch thick. Then cube it into desired size cubes. Fold the cubed bread into the sugar mixture until completely coated in sugar.

Spread onto the prepared peaches.

Bake at 350º F for 30 minutes.

Ingredients
  

  • 8 Large Peaches
  • 3 Eggs
  • 1 1/8 Cup Maple syrup
  • 1 1/8 Cup Coconut sugar
  • 1 1/2 Tsp Cinnamon
  • 3 Tbsp Wheat flour
  • 3/4 Cup Butter Melted
  • 8 Slices Bread

Preparing Peaches

  • Place water on to boil in a large pot. Once boiling put in washed peaches. Boil for 25-30 seconds, until the skins slip off.
  • Transfer peaches into a bowl full of ice water. Let them cool off for about a minute.
  • Once cooled, divide each peach into 4 pieces and remove the pit and skins. Slice into smaller pieces and place into the bottom of a 9×13 glass baking dish.

Bread Topping

  • In a large bowl beat together: eggs, coconut sugar, maple syrup, cinnamon, and flour with a whisk. Once that is mixed up, whisk in melted butter.
  • Slice bread 1 inch thick into desired size cubes. Fold the bread into the sugar mixture until the bread is well coated in sugar.
  • Spread the bread topping on top of the prepared peaches. Bake at 350º F for 30 minutes. Enjoy!!

Notes

For the bread in the topping I use my Sourdough Sandwich Bread recipe.  Pre-sliced store bought bread would work too.
If you don’t want to use coconut sugar in the topping you could use the same amount of browns sugar instead.

For more flavor in the peach cobbler, instead of just melting your butter, brown the butter before adding it to the sugar mixture. 
The peach cobbler will last about 3-4 days in the fridge, but it is so delicious I doubt it will last that long. 
This cobbler is also delicious served hot with vanilla ice cream on top.
